39. Organic Vegetables at Merlotte’s

Even though Bon Temps is in the middle of the swamp and quite a distance from Shreveport or New Orleans, the town still got its fair share of out of town visitors. Visitors were always easy to spot because of their strange requests and startled looks when they realized they weren’t in Kansas anymore.

On one such occasion, a group of young people from Los Angeles and Vermont arrive at Merlotte’s. One of the girls asks Arlene if the vegetables on the menu are organic. She replies that in Bon Temps the term “organic” refers to someone who plays piano in church. The young people are stunned that they can’t get organic food in the middle of the woods, but that’s life in Bon Temps.

Merlotte’s prided itself on being what it was: a place to get good food and good drinks with good friends. When Lafayette was in the kitchen it was real ingredients, including lard. Merlotte’s was not a place for clean eating.
