Sweetbitter season 2, episode 3 recap: Last of the season
A surprise restaurant visitor turns ruffles everyone’s feathers, especially Howard’s on Sweetbitter.
Believe it or not, Howard doesn’t own 22W on Sweetbitter; he just runs the joint.
The actual owner of 22W is Maddie Glover, played by Sandra Bernhard, and she so happens to be back in New York City after months in Asia. She decides to check on her first restaurant, surprising Howard because she usually gives them a heads up that she’s coming.

But one person who wasn’t surprised was Simone.
OK, I have to say something about her. She’s supposed to be the best server in the world, right? How has she not been tapped to run a restaurant by now? She seems to have more clout than Howard!

Maddie wants to taste the entire menu, which hasn’t changed since 1987. Scott prepared everything perfectly, how he always does. But he changed the cedar plank salmon ever so slightly, and Maddie noticed.
She forced how to fire him, and she takes over the rest of the nighttime rush.
Everyone agrees that the firing is ridiculous because Scott keeps these old dishes alive with slight changes. But as Simone tells Tess, these subtle changes just shows how even a successful chef like Maddie is replaceable.

Scott, however, is not; Howard gets his job back, offering him a raise.
Meanwhile, a married couple asks Will to… how do I say this nicely? They ask him to “perform” in front of them so that they can then go and perform as a married couple. Everyone finds out about it and no one things he’ll do it – except for Tess. Well, Will is now $5,000 richer.

I guess he does it to prove her wrong or, in some sick way, to seek her approval because he’s still very into her. After his “act,” he meets up with the gang at their regular spot and asks about Tess. But she’s walking alone in NYC in the middle of the night.
That sounds safe to me.
Tess also meets a handsome architect in the restaurant, who Simone had a fling with once. And by the looks of next week’s episode, Tess goes ouy on a date with him.
